River City Casino & Hotel today announced the opening of its newest dining experience, Cibare Italian Kitchen. Cibare features classic Italian recipes, Neopolitan-style pizza baked in a Wood Stone hearth oven, along with an Italian bakery and coffee shop. River City opened Asia Noodles, an authentic Vietnamese and Pan-Asian restaurant, Sept. 22.

“We named our restaurant Cibare to capture the essence of family dinners where everyone is nourished by the food and lavished in personal attention,” said Chris Plant, vice president and general manager. ”Everything about Cibare, from the freshly baked breads and hand-crafted pastas, to the aroma and warmth radiating from our massive six-foot Wood Stone hearth oven, comes together to bring our guests a taste of the Mediterranean for a truly authentic dining experience.”

Cibare opens under the leadership of Chef de Cuisine Pierpaolo Pittia, a certified“Italian Culinary Master Chef” by the Italian Academia Barilla. Originally from Udine, a city in Northeastern Italy, Pittia began cooking in his family’s kitchen and later in the family-owned restaurants of his village and the surrounding locale.

Cibare’s dinner menu features a delicious selection of house-made pastas and entrees made with locally-sourced ingredients. Chef Pittia’s native specialties include Strozzapreti, Bucatini All’ Amatriciana and his Quattro Formaggi pizza. Guests can have a front-row seat to watch the Italian tradition of baking pizzas in the beautiful copper-clad, wood-burning stone hearth oven. Cibare’s Italian bakery and coffee shop will proudly serve Lavazza, “Italy’s favorite coffee,” made-from-scratch seasonal Italian pastries and sweet buns, and a variety of tortes, cakes, cookies and gelato.

“Our chefs have hand-selected a delightful list of Italian and California wines,” added Plant. “Signature cocktails include Italian classics like the Negroni, the white peach Bellini and the Americano, along with Cibare originals like the Manhattan Siciliano, the Lucky Luciano and Kentucky Meets Italy. The desserts should not be missed, and I highly recommend our ricotta expresso chip cannoli and house-made gelato.”
